The Best Chicken Wings Ever
SAUCY CRUNCHY SPICEY...Oh my
I have been making Chicken Wings for over 25 years and they are one of my specialties. All of my friends and most of my 3 childrens friends have been lucky enough to partake in my chicken wings. In fact, it seems like everyone that knows me knows I can make some bad ass chicken wings. They will really make your taste buds click.
The first chicken wings I ever had were an Chicago in 1985 ad. They were kind of spicey but they were seasoned with way more vinegar then most chicken wings today. I have eaten chicken wings from all over the country and I can assure you that I am a connoisseur of the mighty appetizer. The Chicken Wings I have had from most chains are usually pretty bad, That includes Quaker State & Lube, BW 3's, and of course Hooters. Hooters chicken wings just plain suck.
The best chicken wings I ever had at a restaurant was at the Three Dollar Cafe located in Dunwoody, GA. When I lived in Atlanta I ate there at least once a week. That was in the early nineties and their recipe may have changed since then. In fact, my wife and kids drove through Atlanta last summer and stopped at Three Dollar for some chicken wings and to my surprise they were disappointed.
Like I mentioned earlier I have been making chicken wings for years. I have used thousands of different hot sauces that I have purchased all over the country, I have blended them to create different and unique hot sauce flavors, I have used them as a base and have added my own ingredients, I have grown my own hot peppers and herbs and have made hundreds of batches at home. If you get my point I have tried and tested thousands of hot sauce flavors. After years of tweaking, testing and having friends come over to try my latest hot sauce creation I have settled on a half dozen recipes that will delight any pallet and I am going to share one of them with you today.
You are going to be surprised at the simplicity of these hot sauce recipes, believe me, don't let that fool you.

Hot Chicken Wing Sauce Recipe
24 oz Franks Original Hot Sauce
1/2 stick of real butter
1 tblsp Paprika
3 tblsp Garlic Powder
2 tblsp Cracked Pepper
1 tspn white pepper
1/2 tblsn Cayaan Pepper Powder
1/2 tblsp Chiptle Powder
1/4 cup pureed onions
1/2 tblsp Italian Seasoning
1/8 cup Corn Starch
Add all ingredients cook over low heat until butter is melted and ingredients mixed.
Cooking The Hot Chicken Wings
The best way to cook chicken wings is to deep fry them, its that simple. Usually Deep Fry at about 350 and for at least 12 minutes with fresh oil. It is important that the chicken wing is fully cooked and CRUNCHY. ALL OF THE GOOEY FAT MUST COOK OFF or else the chicken wing is going to suck. Take it from me crunchy wings are important. Do not bread the wings, if you do they will become soggy (Like Hooters) and won't be worth eating.
You can also cook the chickenwings in the oven if you can't deep fry them. Just cook the chicken wings at 400 on a screen until they are well done and crunchy
When the chicken wings are done throw them in a big sauce bowl, throw some sauce on and mix em up.

btw......One of the secret ingredients is the corn starch, it makes the sauce stick to the wing. You bet! Your chicken wings are going to be very saucy.. the way they are supposed to be; CRUNCHY AND SAUCY!
btw. There is a place in Decatur, Il Restaurants that serves wings made a lot like this.

I use Frank's as a base for my wings as well but every other ingredient I use is different than yours. I've been making them for years as well and everyone that has had my wings says "These are the best I've ever had!" Isn't it a great feeling? :)I, however, dislike crunchy wings so I bake mine every time and have never had any complaints. I make wings at least once a week as well. I also do NOT use the puny little guys, I also go for the big wings and make my sauce SPICY! My GF says I'm going to turn into a hot wing eventually. :)

Wow,,, those hot Wings are excellent! Took a little time to make but totally worth it. A little too spicey for my kids but their only 5 and 9. Thanks for sharing your recipe.

Three Dollar Cafe in Atlanta still has the best wings any where...and I've been to the Anchor Bar in Buffalo where they were invented. The best thing to do when ordering at Three Dollar is to order them "Extra Crispy". I do "Medium Extra Crispy", but you can also say "Hot Extra Crispy". Also, their blue cheese dip is the best.
Imma try your recipe anyway... those wings look OMG... Good....

Perfect recipe. Made them last night and the sauce provided enough for 8 pounds of wings. I added alittle more Cayenne (about 3/4tbsp) and it was a perfect heat.

man i made these tonite for th e games and it tasted just bad. i means if you can't get nuff black pepper taste and garlic then whatevver you must like the taste of unbalance. cuz this needs more sweet more heat and lots more butter to eat.

Oh my, those chicken wings look good. You know I'm going to have to try this recipe, and I know exactly what youre saying about crunchy - the crunch is a must, theres nothing worst than soggy fried chicken. Thanks for the recipe, I'll let you know when I've cooked them.
